In The Vegetarian Starter Kit by Peta, there is a recipe called "fudge mint brownies". Everytime i make it, I pull it out of the oven and it is bubbly and i let it cool and it's liquid. The recipe calls for 1 cup granulated sugar, and half cup margarine to be mixed together. Then adding 1 cup flour and a little salt. then 16 oz of chocolate syrup and a little vanilla. Once all that is mixed, put in oven at 350˚F. What is wrong??? The first time i used margarine that said "not recommended for baking frying etc" and the brownies came out liquid with a thin layer of brownie cookie texture on top. Second time I used less than half a cup of vegetable oil and it was just liquid. Am I supposed to wait until it's completely cooled and then it will harden or what??? Yes I'm 100% sure it asks for 16 oz of chocolate syrup. I baked it for 30 minutes at 350 F. I'm absolutely sure I didn't make a mistake, three of us double checked like 5 times each. I'm pretty sure it was mixed well. The first time we used an electric mixer and the second time my sister just went crazy with her arm. moreResolved Question: Why aren't my brownies coming perfect?
I've been trying for a while to make good brownies.. I've been using the best ingredients I could find: organic eggs, Belgian chocolate and natural vanilla and unbleached flour.. I fellow the recipe verbatim but they turn out too "porous". good brownies aren't supposed to be that fluffy.. they're also too hard an crumbly on the outside.. what could i be doing wrong? Here's the recipe i use Supernatural Brownies From Chocolate: From Simple Cookies to Extravagant Showstoppers, by Nick Malgieri. Makes about twenty-four 2-inch-square brownies Though the name sounds an exaggeration, you’ll agree that these brownies are absolutely out of this world. * 16 tablespoons (2 sticks) unsalted butter * 8 ounces bittersweet or semisweet chocolate, cut into 1/4-inch pieces * 4 large eggs * 1/2 teaspoon salt * 1 cup granulated sugar * 1 cup firmly packed dark brown sugar * 2 teaspoons vanilla extract * 1 cup all-purpose flour One 13 x 9 x 2-inch pan, buttered and lined with buttered parchment or foil 1. Set a rack at the middle level of the oven and preheat to 350 degrees. 2. Bring a saucepan of water to a boil and turn off heat. Combine butter and chocolate in a heatproof bowl and set over pan of water. Stir occasionally until melted. 3. Whisk eggs together in a large bowl, then whisk in salt, sugars, and vanilla. Stir in chocolate and butter mixture, then fold in flour. 4. Pour batter into prepared pan and spread evenly. Bake for about 45 minutes, until top has formed a shiny crust and batter is moderately firm. Cool in pan on a rack. Wrap pan in plastic wrap and keep at room temperature or refrigerated until next day. 5. To cut brownies, unmold onto a cutting board, remove paper, and replace with another cutting board. Turn cake right side up and trim away edges. Cut brownies into 2-inch squares. Serving: Serve the brownies on their own or with ice cream and hot fudge sauce. Storage: The best way to store brownies is to wrap them individually and keep them at room temperature in a tin or plastic container with a tight-fitting cover. Or freeze them. Note: If you have a 12 x 18-inch commercial half-sheet pan, you may double this recipe easily. moreResolved Question: Does anyone have a copy cat recipe for Bahama Breeze's Chocolate Island Dessert?

So my candy thermometer wasn't in my utensil draw as it usually is and I overcooked my batch of fudge. As a result it is all grainy and is a dead ringer for home-made taco meat (although it tastes much sweeter). I'm upset because I used very expensive Swiss chocolate and now have to toss it in the trash! Can I salvage this grainy chocolate concoction and use it for something else - brownies or cake or something?? I'd hate to just throw it away if it would be useable in some other recipe. Thanks in advance! moreResolved Question: how do I know if my Brownies are raw or not?

Chocolate Fudge Brownies Recipe Article
October 2008 Selection: Dirty Sugar Cookies by Ayun Halliday
The brownies she baked with her school friends served as a ritual that kept them together and, when other girls were discovering alcohol, their hand-packed picnics were a failed attempt to catch the boys of their own desires. Halliday's foray into vegetarianism is filled with laughingly reported failures, from the lentil burgers that were never solid enough to form into patties to the suspicious pots of unidentifiable leftover brown stews and soups that filled her refrigerator for weeks. Her relationships are remembered by the shared breakfasts at greasy local diners where a true shot to the heart is seeing your ex bring a new fling to the site of your "postcoital breakfasts." For Halliday, food is not just what keeps you living - it's what's worth living for.
No foodie book would be complete without a few recipes sprinkled in for authenticity and Halliday does not disappoint. more
