It was the first time many of the kids had walked six miles. But all finished - shunning the lag bus - despite a steady uphill grade, lots of sore ankles, a few burning feet and one nose bleed.

There was even a bit of good-hearted controversy. Twelve-year-olds Andrew Lyons, Casey O'Connor, Austin Dean and Daniel McIntosh left the others in the dust, running the course instead of walking. Whether grated and added to quiches, pasta sauces and even brownies, or featured as the main ingredient of a recipe, zucchini proves to be a versatile ingredient.

Vegetable tortilla lasagna

This recipe serves two, but can easily be doubled.

2 tablespoons vegetable oil

1 large zucchini (about 10 ounces), cut crosswise into 1/4 -inch-thick slices

3/4 cup frozen corn, thawed

1/4 cup ricotta cheese

1 1/4 cups grated Monterey Jack cheese (about 1/4 pound), divided

1/2 teaspoon ground cumin

1 cup bottled tomato salsa (about 9 ounces)

Six 6-inch corn tortillas

One 7-ounce jar roasted red peppers, drained and patted dry

3 tablespoons chopped fresh coriander (or cilantro)

Accompaniment: Lime wedges
