Italian Cream Cake
Grease three 9-inch cake pans and line with wax paper. 2. To prepare cake, combine buttermilk and baking soda; mix well. Beat egg whites with a mixer at high speed until stiff. 3. Combine granulated sugar, butter and shortening; beat with a mixer at medium speed until light. Add egg yolks, one at a time, beating well. Add buttermilk mixture alternately with flour. Stir in vanilla. Fold in egg whites. Stir in coconut. Pour into pans. 4. Bake 18 to 20 minutes, until a wooden toothpick inserted in center comes out clean. Cool in pans on a wire rack 10 minutes. Remove from pans and cool completely on a wire rack. 5. To prepare frosting, combine cream cheese and butter; beat with a mixer at medium speed until smooth. Reduce speed to low; blend in confectioners� sugar and vanilla. Stir in pecans. more

Champion sharpshooters share birthday cake
One could say the stars are aligned for the horseshoe team of Bob Heron, Bob Lumbard and John Heffron.
The trio, the Peterborough Horseshoe Club's 2008 league and playoff champions, share the same birthday of Jan. 5.
"That's our good luck charm," said Lumbard, 72, yesterday as the trio received their trophies at the club's location at the Peterborough Naval Association.
They won the league's A-division standings with 76 wins in 87 games. They made it a clean sweep capturing the playoff title with 13 wins.
The duo of Shane Harding and Al Ephgrave finished second in both league and playoff competition. It was the 35th year for the club.
Perseverance is a Capricorn trait and for those who believe in astrology it may explain the trio's success. more
