I am making a 3 tier cake for my daughters 1st birthday I want to do white on the bottom and then the top two chocolate. I really want this cake to look good but more importantly taste good. I am going to use a chocolate buttercream as the filling and then ice the cake with just plain buttercream. I can't ice the cake with the chocolate buttercream because I am going to cover it with fondant and i don't want the chocolate to seap thought. My question is does anyone know a homemade cake recipe that is out of this world and would taste good with the choc. buttercream filling and the buttercream icing and the Marshmallow fondant. I know I could use a plain box of cake from the store but like I said I really want to WOW my guests I want them to say that was the most wonderful cake ever! more

I have always made chocolate ganache using dark chocolate & unsalted butter (NO CREAM) because my cakes are often going to parties where they cannot be refridgerated or airconditioned but the cream recipies sound yummy! The next cake I am making is too big to put in the fridge, how soon before the party could I safely ice it do you think? (I have air conditioning but the cake will have a 3 hour journey & venue is not A/C) My ganache makes quite a firm coating - is the cream one soft? The guests will be eating the cake without forks so I don't want a slimmy mess! Voting Question: Why do my cakes condense when i put them in the fridge?

hi, i like to cook and i especcially like to cook chocolate cakes :P however everytime i seem to make one, it seems to come out b.e.a.utifully until, i put it in the fridge and it becomes a condensed, heavy chocolate goo which is set enough to be solid I have tried many recipies and it always does this. The recipie will describe it as light and fluffty, but mine turns out condensed and way to moist WHAT AM I DOING WRONG? is it to do with putting it in the fridge ? thanks more

I have to do a demonstration in front of my class, i can do basically anything that's possible up to but not over 5 minutes in length and that is school appropriate. I have been baking since i was very young. I recently see alot of recipies with Sour Cream in the recipie. I had made a chocolate cake with Sour Cream in it and it was okay. It almost seemed that the SC took away the BOLD chocolate taste that was waiting to burst out. It just never exposed itself like i wanted it to. My very picky boyfriend wants a chocolate chip cake for his birthday and I could not find one that is sold in a box at the store. I dont have a lot of the ingredients or the bakeware needed to make a lot of these recipies online so I was hoping to just add chips to a white cake mix. I actually did it once, though, and all of the chips sunk to the bottom in the oven. How can I prevent this from happening? Use smaller chips? Chop the chips?
