Hi! I'm at the very beginning stages of planning a wedding in New England. Want it to be beachside and haven't determined if it will be Connecticut, Mass or Newport RI. One thing I do know is that while I'm not a cake person, there is one cake in my life that I find to be above all others. It is the cake that my grandmother made for all my school parties and all my birthdays when I was growing up. She passed away about 8 years ago, and I thought a neat tribute to her would be to use her fantastic cake recipe for my wedding cake...specifically, I'd love to have cupcakes for the wedding cake using her coffee/chocolate recipe and frosting and then maybe dip them in white sprinkles to create a fun wedding cake look. Resolved Question: I'm making my first wedding cake, and I need some help!!!!?

My sister asked me to make her wedding cake and the grooms cake, and I have too many ideas, I can't narrow down my plans! Plus, she has to be difficult and be allergic to nuts, and her fiance hates chocolate, the nerve!!! Lol. Anyway, I am making a simple white wedding cake, with buttercream icing. What I want to know is, am I supposed to use the buttercream icing in the layers of the individual tiers? I really want to do some kind of fruity, light filling in between the layers, but I can't find any recipes. Also, is it ok to use real fabric ribbon on a wedding cake?? Somebody help me!!! Sorry, I forgot to mention that I'm making a 4 or 5 tiered wedding cake, to serve about 150 people. I live in a large town with (seriously) no local bakeries.. except for the ones at the grocery stores. I'm looking into making cakes/cupcakes/etc. just for fun and possibly making a small little gig out of it. I know the best thing to do would be to come up with my own great recipe, but i'm curious to know if anyone knows of some really great cake recipes that go over and beyond the basic store bought cake mixes. It's hard to pin point the ingredients in amazing cakes and cupcakes from bakeries. Being a wedding cake fanatic, i'm looking for that kind of taste in my recipes. Any advice or ideas? Websites? Do they have an icing for cakes out there that you can spray on cupcakes or cakes? I am planning on making cakes for my tables at my wedding and instead of gobbing it up with just frosting, I was wondering if you could spray it on instead? They will be the shapes of sunflowers and daisies. The other question is does pound cake have to have frosting of can you use powdered sugar and/order sprinkles instead. This cake needs to be 4tiers. It needs to be white & chocolate for alternating layers. I want to use whip cream and strawberries to join layers of the cake together. If this does not work, then I will use buttercream frosting instead. It needs to be able to hold up in the weather, because we are having an outdoor reception and ceremony in july 2007. I want something that I can start to make about a week in advance. Maybe freeze the cakes to be stacked and decorated later. I will be using fondant to decorate the cake and make the accents.
