My addition of smoked chicken has never been part of the original scheme of things, but it goes so well with this dish that I often serve it as a light summer lunch or as a perfect, hassle-free starter.
For 4 servings you need:
4 smoked chicken breasts, sliced into pieces 2 cups of torn basil leaves 1 small cucumber, roughly chopped 1 red onion, peeled and finely chopped 2 large ripe tomatoes, diced 1 small crusty loaf cut into large chunks 2 tablespoons capers, rinsed and well drained 3 tablespoons red wine vinegar � cup extra virgin olive oil 1 tablespoon castor sugar
Instructions:
In a large bowl gently mix the cucumber, tomato, onion and bread.
In a separate dish whisk the capers, sugar, olive oil and red wine together and pour over the salad. more
