Cafeteria chef cooks at Olympics
While native Chinese cuisine was featured during the games, it was not the prominent cooking style used. During the three months Hall spent in Beijing, two were dedicated to training the native Chinese chefs in western food preparation.
One of the things local chefs had no idea how to do was something most Americans take for granted: grilling steak and chicken. Most of the techniques used by the Chinese were deep frying and broiling.
“You would be surprised with amount of fat that is on the diet for them," Hall said.
By American standards, the average healthy diet consists of about 2,000 calories per day. However, the athletes need a lot of energy, getting it by loading up on carbohydrates and fats.
Hall said Michael Phelps' diet consisted of 12,000 calories per day; he had to constantly eat to maintain the energy levels needed to compete, and his typical diet included pancakes, three egg omelets and ham sandwiches, washed down with two or three energy drinks. more
